Job Description

The Retail Butcher is responsible for preparing, cutting, trimming, and packaging meat products for retail sale while ensuring high standards of quality, food safety, and customer service. The role supports retail sales and customer satisfaction through product knowledge, presentation, and service. While this position reports to the CEO, the Retail Team Leader provides day-to-day work direction, task assignment, and operational guidance to support daily retail operations.

Duties and responsibilities:
•Prepare, cut, trim, bone, and portion meats (beef, veal, lamb, goat, poultry) for retail display and customer orders.
•Package products accurately with proper labeling, traceability, and adherence to quality and food safety standards.
•Operate meat processing equipment safely, including slicers, grinders, vacuum machines, and related tools.
•Provide friendly and knowledgeable customer service, assisting customers with product selection and responding to inquiries.
•Ensure meat products are displayed attractively to support sales and minimize waste.
•Inspect meat for freshness, texture, and quality; trim and prepare products to meet company standards.
•Maintain clean, organized, and sanitary work areas in compliance with food safety requirements.
•Support retail operations including inventory checks, restocking, and reporting discrepancies as directed.
•Follow instructions and priorities set by the Retail Team Leader for daily tasks and workflow.
•Contribute ideas for improving efficiency, quality, and customer experience.
•May assist in training or supporting junior retail staff as assigned.

All employees are required to comply with Parkhill Meats’ health and safety policies, maintain a safe working environment, and promptly report any hazards, accidents, or unsafe practices to their supervisor/manager. Experience Required

Qualifications - Knowledge and Competencies:
•Knowledge of meat cuts, trimming, portioning, and preparation techniques.
•Experience working with meat processing equipment.
•Strong customer service and communication skills.
•Manual dexterity, attention to detail, and ability to perform physically demanding tasks.
•Understanding of food safety practices (HACCP, CFIA) preferred.
•Ability to follow direction, work collaboratively, and adapt in a retail environment.

Working conditions
•Refrigerated processing and retail environment.
•Exposure to raw meat and processing equipment.
•Schedule may include early mornings, evenings, weekends, and holidays.
•Prolonged standing, walking, and repetitive movements.

Physical requirements
•Ability to lift and move meat products up to 25 kg independently.
•Ability to participate in team lifting or use mechanical assistance for heavier items.
•Manual dexterity for cutting, trimming, and packaging.
•Physical stamina for repetitive tasks.
•Ability to work safely in cold and potentially slippery conditions.
